Our citric acid is a naturally occurring compound found in many fruits and vegetables. It’s available in powdered form, and if you’re a fan of all foods puckery and sour, you absolutely should be cooking with it.
Ours is produced by microbial fermentation of non-GMO corn. It is anhydrous citric acid which is more concentrated and of higher value than monohydrate.
Citric acid's name is derived from the fact that it's an organic acid found in many fruits and vegetables, especially citrus fruits. Citric acid is a concentrated powder that is prized for its sour flavor, preservative quality, and ability to act as a pH buffer. For these reasons, citric acid is found in many foods, including preserves, candy, and crunchy snacks.
The acidic pH of citric acid makes it useful as a food preservative and preserves the color of the food since it significantly slows the oxidation. Since many bacteria are unable to grow in an acidic environment, citric acid is often added as a form of preservation.
Why isn't your citric acid organic?
- We only sell organic products but sometimes, they just don't exist or are impossible to source. This is the case with: xanthan gum, guar gum, sodium bicarbonate (baking soda), cream of tartar, double action baking powder, citric acid and most obviously salt.
How can products be labeled as organic if they contain conventional ingredients like citric acid?
- According to USDA rules (which most countries copy), if 95% of a product is made up of organic ingredients, it can be called organic.
- But you can't just add 5% of anything. The non-organic ingredients that can legally go into foods labeled as organic have to be listed in the "National List of inorganic products" that can legally go into foods labeled as organic.
- One of the key terms in the list is "commercially available". As an example organic yeast exists, we sell it but it is not considered "commercially available" as its cost is completely ridiculous. So conventional yeast is allowed in organic bread for example.
